They will need a copy of your V5C to identify your specific model for the attestation de conformity.
Note, the old MZ factory was closed down and the original German company was bought out last year. Shouldn't necessarily affect the homologation records held by the French importer, but be aware you may face potential difficulties....

I'm used to something with a bit more go but just happened to ride this bike yesterday and what a delight it was. Light and very nimble with good brakes and quite quick for a big single. I am amazed they never really caught on.I seem to remember it was only £2500 new.

Euromotor will provide the CoC for about 180€ so now on to the next problem...has anyone tried to register a vehicle here that does not have a UK V5C eg an Isle of Man registration document?
The main issues which concern the import of a non-EU registered vehicle are type approval, liability for customs import duties and VAT.
Type approval - you have your certificate of conformity valid for France;
Import duties - Manx goods are allowed free movement within the EU without tariffs (Protocol 3 of the UK's Act of Accession to the Treaty of Rome);
VAT - the IoM operates within the EU VAT zone so provided the bike does not fall within the definition of a New Means of Transport, there is no VAT to pay upon import to France.
It's fundamentally the same, but the TVA may be an issue I believe, but only the tax office (hotel des impots) can tell you, and you need to go there anyway even for an EU import
