Taking a formation/ nightschool

Hello

I am in the process of moving to Rennes with my GF who is French.  I speak a good standard of french (ie can hold a conversation ) but there is still room for improvement which (I hope) will come with time and a bit of graft.  For the immediate future I realise that my employment prospects are limited to basic interim work but I hope in a few months to be able to find some work in restaurants/hotels (I have worked in catering at various levels for ten years and have a clutch of references from french bosses). 

However, I am looking in the next couple of years to change careers and understand that in france, without relevent qualifications it is near impossible.  Therefore I will be looking to take a formation or nightschool course and just want to know if anyone has experience of doing something like this or if anyone knows of a french equivelent of the Open University whom I'd be able to contact.
