My wife & I & the dog need a holiday sometime in October! Can anybody recommend somewhere in the south, close to a beach for walks/perhaps fishing, close to restaurants/bars and places of interest. Any advice greatly appreciated.

You could try Collioure, it's a very pretty, compact little seaside town, not too touristy out of season, no big high-rise hotels (unlike its neighbouring seaside resorts). There's lots to visit, and it's only a few kilometres away from the Spanish border, if you wanted to pop over there for a day.
Lots of people say it is like St Tropez used to be, before it was "discovered", and it was a great favourite of the artist Henri Mattise.

I would also choose Colliour. We visited for the first time in March, and loved the place itself, the light and the colours. We stayed in a hotel with lovely views, and loved pottering around,. We thought the little train ride was superb - right up high in amongst the vines - superb views! Don't know if it still runs in Oct.
